Rayna recently posted this recipe on Facebook along with a tip for where to buy a whole tray of strawberries for a fiver! We made our way there in time to buy the second last tray, phew! And also picked up a tray of mangoes for cheap. We ate strawberries and cream for dessert and mango smoothies for breakfast with the remainder to be turned into jam and chutney.
Armed with some vanilla beans from the cupboard, some lemons we bought from a local and some recycled jars I spent an afternoon making jam.
It turned out a little sweet with a slight tartness from the lemon. Delicious on toast or dolloped onto some greek yoghurt!
Using spices, other ingredients from the cupboard and a whole lotta mangoes I made up this mango chutney too. It's not as sweet as the mango chutney you can buy in the shops which suits me fine but I think I'll add a little more vinegar next time. We'll be having this with curry tomorrow night.
I'm hoping to do more preserving this year. If you've got any great recipes I'd love to hear them.
