Earlier this week i made up a Bulgur Wheat Salad for dinner.
Bulgur wheat, asparagus, pumpkin, beetroot, broad beans, apricot, lemon and olive oil served up with toasted turkish bread. All organic and all from our local store Plump.
The whole meal cost less than $20 for the five of us and i even had leftovers for lunch the next day.
I need to make an effort to shop here more often rather than the more convenient Coles, and encourage Kev to shop there too since he does the bulk of the grocery shopping. I feel some meal planning coming on.

You don't really need a recipe for this. The bulgur wheat was boiled (just like you would rice but it cooks much faster), the pumpkin and beetroot were cut into cubes and roasted. The asparagus and broad beans were pan fried with a little garlic. The lemon rind was grated then the lemon squeezed (add to taste) and some olive oil drizzled over the top. Mix together and dig in.
