What do you do when someone gives you bags and bags of lemons from their tree?..................
..........you make Lemon Curd of course!!!!
Classic Lemon Curd
- 300g/10oz/1 1/4 cups caster sugar
- finely grated (shredded) peel of 4 lemons
- 150ml/1/4 pt/2/3 cup lemon juice
- 100g/4oz/1/2 cup butter, diced and slightly softened
- 4 large eggs, at room temperature
- Put the sugar, lemon and peel in a bowl (microwave proof). Cook on full power for 5 minutes.
- Remove the bowl from the microwave , add the butter and stir until melted. Allow an extra 30 seconds cooking time to melt the nutter if necessary.
- In a seperate bowl, thoroughly whisk the eggs, then gradually beat the eggs into the lemon mixture.
- Cook, uncovered, on medium heat for 5-6 minutes, beating hard with a spoon or whisk at the end of every minute. When ready, the curd should be really thick and glossy. If not, allow more cooking time.
- Spoon into warmed jars, top with paper discs and leave until cold.
- Cover with lids or gladwrap and label the jars.
- Store in the fridge for up to 6 weeks.
This should make enough for 2 small jars.
One last thing-I want to get my hands on some freezer paper. I haven't seen it here in the shops, does anyone know where i can buy it or would someone be willing to send me some in return for something nice?!
